A lovely, flowering redbud tree is likely on many Canadian homeowners' wish list and, of course, all the more so for us who live north of Zone 6. In order to stack the winter survival rate in our favour we have selected the most cold-hardy version, and in the shrub form. This particular strain is grown from cuttings collected at the Minnesota Landscape Arboretum.
Did you know those beautiful, rosy pink blossoms taste just as good as they look? Enjoy their nutty, sweat pea flavour when eaten raw in salads. Fritters or pancakes made with redbud blossoms are another tasty option. The seed pods are also edible when young and tender. Eastern redbuds are still a charming shrub even after the three-week flowering period is past. The glossy heart shaped foliage stays clean and dark green for the summer. When planted in an ideal, well-drained site these shrubs can reach 4-6m (13-20') in height and width.
