Back in the late 1700's when Tolman Sweet surfaced somewhere in the New England states, the term 'crisp' was not needed to sell an apple. Despite a distinctly old fashioned texture, and even taste, this variety has stuck around for several centuries. During the nineteenth century, a time when granulated sugar was seldom available, Tolman Sweet was esteemed for the pleasantly intense sweetness of it's very dry flesh. This inordinate sugar content, which often exceeds 14 percent, is still an attribute for baking, drying, or pickling purposes, but particularly for cider production, whether sweet or hard. In cider, it's unusually low acid content can also provide beneficial balance to other varieties. Many local farms still have an immense, ancient Tolman Sweet tree or two, bearing mute testimony to its hardiness and longevity.
